Recipe: Truffled Buffalo Mozzarella and Beetroot

Chef Fabio Morisi's Chef Fabio Morisi presents a very simple but fresh and tasty starter.

Buffaloes grazing black truffles

Recipe: Mozzarella Di Bufala

Ingredients [one serving]
5 oz. Buffalo mozzarella with truffles
4 oz. fresh peeled cherry tomato
1 Fresh basil leaf
Finely sliced fresh beets in foil<
Edible flowers for garnish
Chive sprouts for garnish
Salt and freshly ground black pepper, to taste
1 tbs. extra virgin olive oil

Clean and cut the beet greens and place in ice water for 10 min. Drain the water from the mozzarella and cut into slices. Intersperse the two ingredients and add extra virgin olive oil. Decorate with sprouts and basil. Serve. Buon Appetito!
