La ceremonia de la Lista de San Pellegrino World<\/em>, celebrada en Londres el pasado 29 de abril, fue una confirmaci\u00f3n de que la supremac\u00eda culinaria espa\u00f1ola est\u00e1 de vuelta. El chef Joan Roca<\/strong>, del restaurante El Celler Can Roca<\/em>, situado en Gerona, recib\u00eda con modestia y alegr\u00eda este premio en un momento en el que Espa\u00f1a parece estar relegada al segundo plano en bastantes aspectos.<\/p>\n

\nEl Celler Can Roca<\/em> hace una apuesta que fusiona la tradici\u00f3n con la modernidad culinaria. Situado a s\u00f3lo treinta millas del famoso El Bulli<\/em>, tambi\u00e9n en Gerona, este restaurante catal\u00e1n es uno de los m\u00e1s respetados del mundo. Fundado en 1986 por los hermanos Roca<\/strong> –Joan<\/strong>, Josep<\/strong> y Jordi<\/strong>– se traslad\u00f3 a su actual ubicaci\u00f3n en el 2007.<\/p>\n

El restaurante radica en una casa t\u00edpica catalana. El dise\u00f1o interior, moderno, con grandes ventanales de cristal, suelos de madera, muebles minimalistas y un ambiente confortable no distrae la atenci\u00f3n de la comida. En cada mesa hay tres piedras que representan a cada uno de los hermanos Roca<\/strong>: Joan Roca<\/strong>, chef ejecutivo; Josep Roca<\/strong>, sumiller; y Jordi Roca<\/strong>, chef de reposter\u00eda.<\/p>\n

La cocina podr\u00eda describirse como catalana tradicional con un toque de modernidad. Al igual que Noma<\/em>, el \u00faltimo restaurante que ostentaba la primera posici\u00f3n de la lista, El Celler<\/em> utiliza principalmente ingredientes locales, y sigue de cerca las tendencias en desarrollo sostenible y gastronom\u00eda molecular para mantenerse al d\u00eda con las innovaciones culinarias, algo que se pone de manifiesto en sus aceitunas caramelizadas y en sus galletas de calamares congeladas en nitr\u00f3geno l\u00edquido.<\/p>\n

Sin embargo, lo que eleva a este restaurante por encima del resto es su inclinaci\u00f3n por la innovaci\u00f3n t\u00e9cnica y su seguimiento de las m\u00e1s venerables tradiciones. Los chefs logran captar el equilibrio creativo perfecto entre el antiguo y el nuevo mundo, y se dejan llevar por la libertad celebrando un compromiso con la innovaci\u00f3n y el avance culinario que a la vez se mantiene fiel a los antepasados de la familia.<\/p>\n

Edward Owen<\/strong>, de The Times, lo describe como \u201cuna fusi\u00f3n de platos tradicionales con toques surrealistas\u201d. El men\u00fa incluye ingredientes t\u00edpicos de la alta cocina como langosta, caviar y foie gras<\/em>, pero tambi\u00e9n deja sentir su influencia catalana ofreciendo ingredientes como la palometa y la merluza, pescados de la zona.<\/p>\n

En cada mesa, el comensal es bienvenido con una selecci\u00f3n de aperitivos para \u201cabrir boca\u201d. Por lo general se sirven en un tronco de \u00e1rbol. Se preparan en una secci\u00f3n de la cocina llamada El Mundo,<\/em> que re\u00fane sabores de todos los pa\u00edses. Algunos de sus platos m\u00e1s populares son: steak tartar<\/em> de ternera servido con helado de mostaza y compota, carpaccio de manitas de cerdo con aceite, timbal de pato y manzana con aceite de vainilla, almejas con sorbete de pomelo y Campari, cochinillo ib\u00e9rico con salsa de pimiento rojo, ajo y terrina de membrillo, y el plato m\u00e1s especial del chef Jordi,<\/strong> Anarchy:<\/em> una degustaci\u00f3n aleatoria de postres con 43 sabores en un plato compuesto por 12 cremas, 7 gelatinas, 7 salsas, 3 granizados, 2 espumas, 2 helados, 3 tartas de frutas y 7 crujientes. Una de las tendencias m\u00e1s frescas y populares es la de los postres inspirados en perfumes de marcas de moda, que resaltan la importancia del olor en nuestra apreciaci\u00f3n de los alimentos. Actualmente en el men\u00fa del restaurante se puede disfrutar de un postre inspirado en Shalima<\/em>r de Gerlain. Como novedad, Joan Roca ha invertido el proceso: de un postre de la carta, N\u00favol de llimona, <\/em>ha creado un perfume con el mismo nombre, que seg\u00fan el repostero <\/strong>huele a \u201cmagdalena de lim\u00f3n mojada en un bol de leche\u201d.<\/p>\n

Roca dijo a la revista TIME: \u201cNo sabemos si somos los mejores, pero puede estar seguro de que continuaremos trabajando con generosidad y creatividad. La gastronom\u00eda espa\u00f1ola necesitaba esto. Necesitamos un empuj\u00f3n como este para probarnos a nosotros mismos de nuevo frente al mundo\u201d.<\/p>\n

Pero algunos son un poco esc\u00e9pticos acerca de este premio. Para empezar, juzgar y clasificar un tema tan subjetivo como una cena en un restaurante puede resultar dif\u00edcil y cuestionable. San Pellegrino, la compa\u00f1\u00eda que produce la lista, ha sido criticada en el pasado por la falta de transparencia en los requisitos y procedimientos que se utilizan para clasificar los restaurantes. Se afirma que algunos cr\u00edticos gastron\u00f3micos de la organizaci\u00f3n ni siquiera visitan dichos establecimientos, por lo que el proceso es corrupto y obsoleto. Sin embargo, los chefs y gourmets m\u00e1s conocidos de todo el mundo respetan la lista.<\/p>\n

\nEl Celler de Can Roca<\/em> trajo de vuelta a Espa\u00f1a el m\u00e1ximo galard\u00f3n, destronando a Noma<\/em>, el incre\u00edble restaurante n\u00f3rdico de Ren\u00e9 Redzepi<\/strong> en Copenhague. Se rescat\u00f3 el orgullo culinario regional iniciado por El Bulli<\/em>, n\u00famero uno durante cuatro a\u00f1os consecutivos. Los hermanos Roca<\/strong>, Gerona y Espa\u00f1a en general se sienten muy agradecidos por estar de vuelta en el centro de la atenci\u00f3n gastron\u00f3mica.<\/p>\n
