Su propuesta gastron\u00f3mica se basa en la multitud de sabores y colores de la <a href=\"\/gastronomia\/guanajuato-capital-iberoamericana-de-la-gastronomia-2015\" target=\"_self\" rel=\"noopener noreferrer\">rica y variada gastronom\u00eda de M\u00e9xico<\/a>, interpretados desde una perspectiva cosmopolita. De esta forma, en el men\u00fa se incluyen tambi\u00e9n materias primas espa\u00f1olas, junto a una delicada est\u00e9tica contempor\u00e1nea, pero siempre respetando fielmente la esencia de cada receta.<\/p>\n<p>En la cocina de Punto MX se veneran las elaboraciones de la cocina mexicana y se combinan con otras t\u00e9cnicas, fruto de la innovaci\u00f3n gastron\u00f3mica, para obtener una cocina \u00fanica, con identidad propia y sabores aut\u00e9nticos mexicanos. El guacamole preparado al momento, frente al comensal, en el tradicional molcajete (mortero de piedra volc\u00e1nica); el tu\u00e9tano a la brasa, servido dentro del propio hueso cortado de manera transversal, y los variados tacos del chef Ruiz, como el de at\u00fan de almadraba o el de buey gallego madurado, son algunos de los platos que han encumbrado a Punto MX desde su apertura y que le han hecho merecedor de ser el \u00fanico restaurante mexicano en Europa premiado con una estrella Michelin. Este laborioso proceso establece las pautas para la cocci\u00f3n de los granos del ma\u00edz y su conversi\u00f3n en masa, de manera que se potencien sus propiedades y sus cualidades nutritivas. Las tortillas se sirven siempre acabadas de hacer y en su punto \u00f3ptimo, es decir, no m\u00e1s de siete minutos despu\u00e9s de haber sido cocidas. <\/p>\n<p>La loable labor de <strong>Roberto Ruiz<\/strong> no s\u00f3lo se ve reflejada en sus brillantes platos, pues en la planta superior de su restaurante Punto MX ha creado un espacio, Mezcal Lab, con una interesante selecci\u00f3n de tequilas y mezcales, adem\u00e1s de una l\u00ednea propia de cocteler\u00eda con mezcal, que incluye propuestas como la Mezcali\u00f1a o el Mezcal Chamuco.
