Sorprende, y mucho, que un chef nacido en Calcuta, India, m\u00e1s interesado en su adolescencia en tocar la bater\u00eda en grupos de rock que en los fogones, acabara triunfando y convirti\u00e9ndose finalmente en uno de los cocineros m\u00e1s distinguidos a nivel internacional. <\/p>\n

Pero Anand Gaggan<\/strong>, que buscaba la diferencia como forma de entender el mundo, decidi\u00f3 irse a estudiar a Espa\u00f1a con el grupo de investigaci\u00f3n dirigido por el chef espa\u00f1ol Ferran Adri\u00e0<\/strong>, para empaparse de las nuevas t\u00e9cnicas culinarias y trasladarlas al universo gastron\u00f3mico de la cocina india. <\/p>\n

Al finalizar sus estudios, vio claramente que Bangkok<\/a> ser\u00eda el lugar indicado para dar rienda suelta a su imaginaci\u00f3n. Lleg\u00f3 en el 2007, pero los primeros a\u00f1os en tierras tailandesas no fueron f\u00e1ciles, pues trabaj\u00f3 para varios restaurantes indios que nunca llegaron a entender esa determinaci\u00f3n de Gaggan<\/strong> por crear platos de autor en una cocina tan tradicional y tan poco proclive a los cambios como la india. <\/p>\n

Frustrado y desencantado, pero con muchas ganas de seguir trabajando en Bangkok, ya que adoraba su ambiente y la incre\u00edble cantidad de buenas materias primas existentes, Anand<\/strong> decidi\u00f3 abrir su propio restaurante en el centro y llamarlo Gaggan<\/a>. Lo logr\u00f3 en el 2010, con la ayuda de un fiel grupo de amigos.<\/p>\n

Un indio representando a la mejor gastronom\u00eda de Bangkok puede parecer en principio ins\u00f3lito, pero no lo es si se conoce que la cosmopolita capital tailandesa ha crecido mucho en los \u00faltimos a\u00f1os, y hasta ella han llegado tantos profesionales y fortunas, que se ha convertido en el centro pol\u00edtico, social y econ\u00f3mico, no s\u00f3lo de Tailandia, sino de todo el sudeste asi\u00e1tico. Su influencia actual es de tal magnitud que hoy por hoy posee el estatus de ciudad global.<\/p>\n

En esta nueva era, Bangkok est\u00e1 mostrando un caldo de tendencias culinarias de primer orden. Entre ellas destaca la cocina de Anand<\/strong>, que reinterpreta con talento y respeto la cocina callejera de sus antepasados con un toque de modernidad, sin dejar de lado innovaciones como la cocina molecular o m\u00e9todos como el nitr\u00f3geno l\u00edquido para mostrar platos de una contundencia visual y una perfecci\u00f3n de sabores realmente destacable.<\/p>\n

Sus chuletas de cordero con whisky ahumado, yogur esferificado y chutney de mango es una de sus creaciones m\u00e1s celebradas, as\u00ed como los kebabs de pollo con pimienta verde combinados con espuma de cilantro, entre otras delicadas propuestas.<\/p>\n

El restaurante se halla en una edificaci\u00f3n de la \u00e9poca colonial y est\u00e1 decorado con muebles de ca\u00f1a, ventiladores de techo y paredes blancas.<\/p>\n

Hay varios comedores privados, entre ellos uno situado frente a la cocina, en el que los comensales pueden ver de cerca la buena mano de Anand<\/strong> y su equipo. El servicio es discreto y altamente profesional, destacando su carta de vinos y sus originales cocteles.<\/p>\n

En los \u00faltimos a\u00f1os, el Gaggan ha ocupado importantes lugares en la lista de los \u201c50 Mejores restaurantes del mundo<\/a>\u201d de S. Pellegrino. En 2014 ocup\u00f3 el puesto diecisiete en el ranking, y en 2015 consigui\u00f3 alzarse con el premio al mejor restaurante de Asia y d\u00e9cimo del mundo. Todo un logro para un joven nacido en Calcuta que un d\u00eda so\u00f1\u00f3 con ser una gran estrella del rock y acab\u00f3 convirti\u00e9ndose en uno de los mejores y m\u00e1s valorados chefs del mundo. \u25a0<\/span><\/p>\n
